Gluten-Free Grilled Lemon Herb Chicken


  • 4 boneless, skinless chicken breasts
  • 2 lemons
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste


1. Prepare the Marinade:

In a small bowl, combine the juice of one lemon, minced garlic, chopped rosemary, thyme, parsley, and olive oil. Season with salt and pepper to taste. Mix well.

2. Marinate the Chicken:

Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it's well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or preferably for a few hours to allow the flavors to meld.

3. Preheat the Grill:

Preheat your grill to medium-high heat (around 375-400°F or 190-200°C). Clean and oil the grill grates to prevent sticking.

4. Grill the Chicken:

Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken breasts on the preheated grill. Grill for about 6-8 minutes per side, or until the chicken is no longer pink in the center and reaches an internal temperature of 165°F (74°C). Cooking times may vary depending on the thickness of the chicken breasts.

5. Lemon Garnish:

While grilling, cut the remaining lemon into slices. During the last few minutes of grilling, place the lemon slices on the grill to get some grill marks and a slightly smoky flavor.

6. Serve:

Once the chicken is done, remove it from the grill and let it rest for a few minutes. Serve the grilled chicken with the grilled lemon slices for extra flavor. Garnish with additional fresh herbs if desired.
