Built-in charcoal grills for outdoor kitchens

A built-in charcoal grill is a grill head with no cart that drops into a cutout in your island, like a built-in gas grill. The Bull Bison 88787 is a 304 stainless steel drop-in head with an adjustable charcoal bed for heat control, 575 sq. in. of primary cooking surface plus a 176 sq. in. warming rack, and a gasketed lid to hold heat. The same head is sold on a cart as the Bison 88000. Check the cutout on the product page and the manufacturer's spec sheet before the island is built, and follow the installation manual for your enclosure.

Kamado grills

Kamados are egg-shaped charcoal grills that hold heat for smoking as well as searing. Primo makes ceramic kamados in oval sizes from Junior 200 to XXL 500, plus a round model, sold alone or with a cradle, shelves or table. Blaze's 20-inch kamado is cast aluminum, and Blaze offers a 34-inch island sleeve with a drawer (BLZ-KMDO-SLV-LT) to build it into a counter. See the rest of the Blaze outdoor kitchen line on the Blaze grills page.

Choosing a charcoal grill

  • Built-in or freestanding: pick a drop-in head for an island, a cart grill if you want to move it, or a kamado for smoking.
  • Cooking area: compare primary cooking surface on each product page against the number of people you cook for.
  • Heat control: look for an adjustable charcoal bed or tray and adjustable vents.

Charcoal grill FAQ

Can a charcoal grill be built into an outdoor kitchen?

Yes, if it is made as a drop-in grill head. The Bull Bison 88787 is a 304 stainless built-in charcoal grill with an adjustable charcoal bed and 575 sq. in. of primary cooking surface. Check its cutout before building, and follow Bull's installation manual and your local codes for the island.

Can I build a kamado grill into an island?

Yes, with a sleeve made for it. Blaze makes a 34-inch kamado island sleeve with a drawer (BLZ-KMDO-SLV-LT) for its 20-inch cast aluminum kamado, so the grill sits in the counter instead of on a cart. Check the sleeve's dimensions against your island plan and follow Blaze's instructions.

Should I choose a ceramic or cast aluminum kamado?

Both cook the same way; the material changes the build. Primo makes ceramic kamados from the Oval Junior 200 to the XXL 500, and Blaze's 20-inch kamado is cast aluminum. Compare cooking area and weight on each product page, and whether you need a cradle, table or cart.
