Description
The Blackstone 30" Electric Built-In Griddle (model 8010) drops into an outdoor kitchen and runs on 240V power instead of gas. It has three heat zones, and each knob has a digital readout showing that zone's temperature, adjustable from 120°F to 600°F.
The Omnivore griddle plate sits under a stainless steel hood. Grease runs to the back of the plate and into a drawer you pull out from the front, so you don't have to reach behind the island to empty it.
Plan ahead: a licensed electrician must install it on a 240V circuit protected by a breaker, with an accessible disconnect. The island cavity is about 30-1/2" x 20-1/2" x 6-1/8", and the enclosure has to be fire-resistant and able to hold 250 lb.
- Heat zones: 3, 120-600°F
- Power: 240V, 5,400W
- Install: Built-in, licensed electrician
- Size: 32-1/4" W x 24-3/4" D x 11-3/4" H
- Warranty: 1 year parts, 90 days labor

Features
- Three heat zones with digital readouts: turn a knob to set its zone from 120°F to 600°F; the display shows the temperature it reads. The default setting is 600°F.
- Preheat signal: the PREHEAT light flashes until the zone reaches temperature, then a buzzer beeps three times.
- Automatic sleep: the griddle goes to sleep after 30 minutes with no zone running.
- Omnivore griddle plate: Blackstone's plate technology, under a stainless steel hood. Don't operate it with the hood closed.
- Front-access rear grease drawer: grease drains to the back and collects in a cup inside a drawer that pulls out from the front.
- Electric, no gas line: runs on 240V, 5,400W.

- Three control knobs
- Grease cup and grease drawer
- Hardware
You'll also need
- A licensed electrician and a dedicated 240V circuit with a correctly sized breaker
- An electrical disconnect within reach of the cook
- A fire-resistant island or cabinet cut-out that supports 250 lb

Installation planning
- Electrician: a licensed electrician must install the griddle and connect the wiring. The unit is not fused, so the circuit needs properly sized fuses or a breaker, plus a disconnect the cook can reach. The appliance must be grounded.
- Cut-out: cavity width 30-3/8" to 30-5/8", depth 20-3/8" to 20-5/8", height 6-1/8", at least 3-3/8" from the back. The manual shows a cabinet 23-3/4" deep and 35" high.
- Enclosure: it must be built of fire-resistant materials and support at least 250 lb. Keep 3" between the griddle and combustible materials at the sides and back.
- Outdoors only: never leave it running unattended, and don't operate it with the hood closed.
Care and maintenance
- Before the first cook: season the plate with thin coats of oil, as described in the manual's seasoning steps.
- After each cook: while the top is still warm, push debris into the grease cup and wipe it down. Add a few tablespoons of water and scrape again (a little coarse salt helps with stuck-on food), then dry it and apply a thin coat of oil. Don't use soap on the griddle top.
- Grease cup: empty it after every use, once the griddle has completely cooled.
- Body: wash with warm, soapy water and wipe dry. Don't use Citrisol, abrasive cleaners or concentrated cleaners. Electrical service must be done by a certified electrician, or the warranty is void.
Warranty
Blackstone replaces defective parts for one year from the date of purchase, and covers labor for replacing defective parts for 90 days. Maintenance must be done by a certified electrician; work by anyone else voids the warranty. The warranty covers residential use by the original purchaser in the United States and Canada. It does not cover cosmetic marks, normal wear, storm or weather damage, rust and corrosion, discoloration from chemicals, pool or salt water, or damage from improper assembly, installation or use. Register the griddle at blackstoneproducts.com to activate the warranty. Full terms are on page 3 of the owner's manual.
