Outdoor griddles give you a flat steel cooking surface for breakfasts, smash burgers, stir-fries and anything that would fall through grill grates. Built-in (drop-in) griddles install into an outdoor kitchen island next to your grill; freestanding griddles sit on their own cart or cabinet. Compare by size, number of heat zones and fuel type (propane, natural gas or electric). Installing a built-in griddle into a combustible island usually requires the manufacturer's insulating jacket.
