Description
The Blackstone Select 28" Griddle with Cabinet (model 6009) is a three-zone propane griddle on a 304 stainless steel cart. The propane tank stores behind two soft-close cabinet doors, with an inner shelf above it for seasonings and tools.
The cooking surface is 28-3/4" x 21-1/2" (618 sq. in.) on Blackstone's Omnivore griddle plate, with a hood that closes over it between cooks. Two side shelves fold down, six accessory hangers keep tools at hand, and locking swivel casters let you move it and hold it in place.
Plan ahead: it runs on a standard 20 lb propane tank, and the igniter takes one AA battery. Set it up outdoors, 36" from anything combustible.
- Cooking area: 618 sq. in., 3 zones
- Fuel: Propane, 20 lb tank
- Storage: Tank cabinet with inner shelf
- Size: 65" W x 30" D x 43-3/4" H

Installation planning
- Outdoors only. Never use it inside a building, garage or other enclosed area, or in a boat or RV. Under a roof, the space can have no more than two walls, or three walls with at least 30% of the enclosure's perimeter permanently open. Doors, windows and screens don't count as open.
- Clearance: keep 36" between the griddle and anything combustible. Don't use it under a combustible overhang.
- Gas: installation must meet local codes, or ANSI Z223.1/NFPA 54, CSA B149.1 or CSA B149.2 where there are none. The 20 lb cylinder sits on the cart base inside the cabinet and is held by a wing screw. Leak-test every connection with soapy water before lighting.
- Assembly: plan on two people and a #3 Phillips screwdriver; wear gloves, since some edges are sharp.
- Weather and storage: it operates down to 0°F. Let it cool to 115°F before moving or storing it. Store it indoors only with the gas supply disconnected and removed; outdoors, keep it covered.
Care and maintenance
- Before the first cook: wash the griddle top once with hot, soapy water, rinse and dry it. Then season it: heat on high until the top changes color (about 10 minutes), spread 2-3 tablespoons of oil in a thin layer, and repeat 3-4 times until the surface is black.
- After each cook: while the top is still warm, push debris into the grease cup and wipe it down. Add a few tablespoons of water and scrape again (a little coarse salt helps with stuck-on food), then dry it and apply a thin coat of oil. Don't use soap on a seasoned top.
- Grease cup: empty it after every use, once the griddle has cooled.
- Rust: rub it off with steel wool, low-grit sandpaper or a pumice stone, then re-season. Humid and coastal climates need more frequent seasoning.
- Cart and body: wash with warm, soapy water and wipe dry. Don't use Citrisol, abrasive cleaners or concentrated cleaners. Clean the burners at least once a month while spiders are active, or after the griddle has sat unused.
